How To Make Old Fashioned Chicken and Dumplings

If you’re from the south, then your mom or grandma surely would have raised you with their perfect chicken and dumplings dish. This popular Western comfort food is not only enjoyed by the southern crowd but of others as well. The chicken and dumplings recipe is normally passed down from generation to generation, making it a classic favorite. Through the times, many variations of the soup have sprouted but nothing beats the old fashioned recipe straight from family tradition.   • Prepare the ingredients. For the chicken, you will need seven pounds of chicken pieces, four cups of chicken stock, and three teaspoons of salt, half a teaspoon of black pepper, one bay leaf, and three stalks of chopped celery, chopped carrot, and two chopped onions. For the dumplings, you will need two cups of all-purpose flour, half a teaspoon of baking powder, one teaspoon of salt, one tablespoon of shortening, one egg, one cup of water, and half a cup of milk.
  • Make the broth. Boil the chicken in a large pot together with the chicken stock, onion, carrot, celery, bay leaf, salt and pepper. Cover the pot and simmer in medium high heat for about one and a half hours or until chicken meat is tender. Then, remove the chicken pieces and bay leaf after boiling. Set the chicken aside while you make the dumplings. Debone the chicken when cooled.
  • Make the dumplings. In a mixing bowl, beat the egg together with milk and water. Add the flour, baking powder, salt, and shortening. Mix until the dough is soft and a bit sticky. Put the dough on a floured surface and sprinkle with more flour. You can roll it out into about a quarter of an inch and cut into one inch squares or just get a large spoon and simply scoop the dough. Let it rest for about thirty minutes or until the dough rises.
  • Combine the chicken and dumplings. Bring the chicken meat and broth back into a boil and add salt and pepper to taste. Drop the dumplings into the broth, one at a time to prevent the dumpling from sticking together. Cover and let it simmer for about fifteen minutes or when the dumplings are cooked. Stir occasionally to avoid the dumplings from sticking. You can test one dumpling to make sure the dish is ready. Garnish with parsley or cilantro and serve while hot. Enjoy!
