How To Make Sour Cream Chicken Enchiladas

During family dinners and occasions, one of the challenges is finding dishes that the entire family will enjoy. This may seem simple at first, but remember that children can be quite picky eaters and may snub your gourmet meals in favor of hot dogs and chicken nuggets. If you want a satisfying dish that is easy to prepare and which the entire family will love, try the sour cream chicken enchiladas. Here’s how.

  • Cook the sauce. Start by adding a few chunks of butter into a large pan or skillet. Wait until the butter has fully melted, and then add the half a cup of finely chopped onions. When the onion has softened, add in three tablespoons of chopped garlic. Cook until the garlic has turned golden brown. Afterwards, add four ounces of green chilies that have been chopped to small pieces. Add in a can of chicken soup and a can of sour cream. Allow the mixture to come to a boil, and then simmer for around three minutes, stirring occasionally. After the recipe has finished cooking, you can pour the sauce in a bowl.
  • Add in the chicken. Now, take some more butter and melt it so that you will have something to cook your chicken in. cook around two cups of shredded chicken until the chicken meat has turned from pink to white. Afterwards, add in a cup and a half of shredded cheese. Make sure that the fire is at the lowest setting, so that the cheese does not burn as it melts. After melting the cheese, add in the sour cream sauce that you have prepared earlier. Allow to simmer for several minutes.
  • Prepare the tortillas. While the chicken and the sauce are simmering on the stove, you will need to heat up your soft taco tortillas. You need a single package of these tortillas. Follow the instructions in the packaging so that you will be able to warm the tortillas properly. Afterwards, add in the filling into the tortillas. Each shell will need approximately a quarter of a cup of filling. Place all of the tortillas on a baking dish with the closed side of the tortilla facing upwards. Afterwards, take the leftover sauce and pour it on top of the tortillas until all of the tortillas are covered. Use a spoon in order to spread the tortillas evenly. Otherwise, the tortillas can get burnt in the oven.
  • Bake. Make sure that the oven has been preheated to a temperature of around 350 degrees before you add in the enchiladas. Once the temperature has been reached, place the dish in the oven and allow to bake for around half an hour. You will know that the dish is already finished cooking by checking whether bubbles have already formed on the surface of the dish. The dish should start turning bubbly if it is already cooked.

Before serving the dish, add some more shredded cheese on top, and serve with some ranch dressing on the side. With these steps, you should be able to create a simple dish that everyone will enjoy.
