How To Make Sweetcorn and Mushroom Puffs
Ingredients:
1 large onion
1 lb mushrooms
1 tin sweetcorn
2 tbsp cornflour
7 fl. oz milk (or soya milk)
A little extra milk
1 or 2 slices of wholemeal bread
1 pkt frozen vegetarian puff pastry
Directions:
Chop onion and saute. Add mushrooms and drained sweetcorn, cooking for 2-3 minutes.
Mix the cornflour with the extra milk. Add the milk to mushroom mixture, heat and then add the cornflour paste.
Grind bread into breadcrumbs and add to pan.
Roll out thawed pastry into two rectangles, fill each with mixture and fold in half and press down the open edges (as pasties).
Cook in the oven at gas mark 5/ 190degrees C/ 375 degrees F for 20-30 minutes. Serve hot or cold.
