How To Make Sweetcorn and Mushroom Puffs


  • 1 large onion
  • 1 lb mushrooms
  • 1 tin sweetcorn
  • 2 tbsp cornflour
  • 7 fl. oz milk (or soya milk)
  • A little extra milk
  • 1 or 2 slices of wholemeal bread
  • 1 pkt frozen vegetarian puff pastry


  1. Chop onion and saute. Add mushrooms and drained sweetcorn, cooking for 2-3 minutes.

  • Mix the cornflour with the extra milk. Add the milk to mushroom mixture, heat and then add the cornflour paste.
  • Grind bread into breadcrumbs and add to pan.
  • Roll out thawed pastry into two rectangles, fill each with mixture and fold in half and press down the open edges (as pasties).
  • Cook in the oven at gas mark 5/ 190degrees C/ 375 degrees F for 20-30 minutes. Serve hot or cold.
